Istrian Malvasia is the most important autochthonous variety in Istria, so it is only natural that Malvasia is the first wine of the In Sylvis winery.
After harvest, Istrian Malvasia grapes are processed by mulching, crushing, and pressing. The fermentation process is monitored daily in stainless steel tanks under controlled conditions.
The final product, In Sylvis Istrian Malvasia, is a yellow-gold wine with a pleasant freshness and a complex aromatic profile. After tasting, you will be surprised by the fullness of taste and duration. With its 13% ABV and emphasized minerality, this Malvasia is an alive and well-rounded wine that leaves an impression of lightness.

In Sylvis Florens Rosé is an aromatic and attractive dry wine that we make by approaching the red Teran grapes as if they were white: by
mulching, crushing, and pressing without maceration. The wine is a beautiful pink color and tastes lively and clean,with freshness of Teran but lots of fruity sweetness at the end. Hence the name of this wine, Florens, that means floral and spring and corresponds to its fluttering scent. If you're a fan of delicate wines, you'll love In Sylvis Florens Rosé. It pairs wonderfully with salats, white meat, fish, or light desserts, and provides a gentle refreshment
in the summer.

Tempora Anni (lat. seasons of the year) is a sparkling wine of istrian malvasia wine sort, made in the charmat method of fermentation in a tank. Tempora Anni is breezy and serious at the same time. It is perfect for every season: as a toast on a New Year’s Eve or with a light summer dessert.
Arbor
In Sylvis Arbor collection consists of wines aged in oak barrels, which is why it is called Arbor (lat. wood). The patience and attention that this process requires pay off: In Sylvis Arbors are characterized by powerful and full taste, structure, and complexity of smell. These are wines that age nicely and come in packaging that allows for longer storage. In Sylvis Arbor collection includes matured Arbor Malvasia, Cuvée, and Selection.

Arbor Istrian Malvasia is a harmonious wine embellished with a straw yellow color with golden edges. It is crystal clear and partly
dense. The first scent features notes of ripe white fruit, dominated by pear and quince. A year spent lying in oak barrels enriched this wine with notes of vanilla and hazelnut, which were extracted from the wood of the barrel but in the end did not cover the varietal aromas of Istrian Malvasia. Maturing and mulching were followed by a 48-hour maceration at low temperatures. Thanks to this production method, Arbor Malvasia is adorned with a pleasant freshness and softness of taste and minerality typical of Malvasia from central Istria.

Our blend of Teran, Cabernet Sauvignon, and Merlot will mesmerize you with its maturity and elegance. These three varieties ripen at different times, so they are harvested separately in late September and early October, and then separately vinified. After stabilization, Merlot and Cabernet Sauvignon were first blended, aged in tonneau oak barrels when mixed, while Teran matured separately in barrique barrels. The result is a harmonious, dry wine with 14.0% ABV, enrobed in elegant dark ruby color with lighter edges. It is clear and partially dense, with a pleasant, deep and complex scent with notes of berries, smoke, and dark chocolate.

Named after our family nickname, this wine elegantly combines regional winemaking heritage with the personal journey of its creator, who embarked on his winemaking journey without family heritage, determined to create it on his own. While we, Lara and Marko, collaborate on all In Sylvis wines, the Teran Baćun is distinctively his, showcasing the robust character of both the Teran grape and the Baćun family.
Baćun Teran features an intense dark purple color and the aroma of red fruits. It ages for a year in 500 L oak barrels. On the palate, it is powerful, medium tannic, full-bodied yet lively. For us, this is more than just a wine; it's a story of commitment and craftsmanship of a young family resolved to make a mark on the wine map of Istria.
